Beef and Vegetable Stir-fry with Moringa Juice

Ingredients:

  • 300g Beef strips
  • 4 Tablespoons soya sauce
  • 4 Tablespoons Moringa juice
  • 500g Spar Tropical Vegetable Stir-Fry
  • 2 Teaspoons Robertson’s Barbeque spice
  • Pinch of salt (Optional)
  • 2Tablespoons Cooking Oil
  • 200g fresh moringa leaves

Instructions:

  1. Soak the beef strips in soya sauce for 15 minutes.
  2. Sprinkle with the Barbeque spice and salt.
  3. Heat oil in wok over medium heat and fry the beef strips until golden brown.
  4. Remove the meat from heat and put aside.
  5. Return wok to stove and fry vegetables for 6 minutes in the same oil. Do not overcook.
  6. Add the meat to the vegetables and stir.
  7. Before dishing up,stir the moringa juice through the dish.
  8. Serve immediately.

Moringa Juice

  1. Wash  the moringa leaves under clean running water and put in a blender until the leaves turn into a pulp.
  2. Spoon the pulp into a cheesecloth or straining cloth. Wring out the moringa juice and put aside. (If you don’t have a cheese cloth,a regular clean dish-towel can work as well).
  3. Put in the fridge whilst you prepare the rest of the meal
