Kogholog Riibo

Our recipe is called in local Moré language “COVID KOGHOLOG RIIBO” which means in French “Protective food against COVID 19”.
The recipe I am presenting today is made from fresh leaves and moringa powder, cowpeas (or beans) and fish.

Ingredients:

  • ½ kg fresh moringa leaves
  • 1 tablespoon Moringa seed powder
  • ½ kg Cowpea or bean
  • ¼ kg Fresh mackerel fish 
  • Clove Garlic
  • Bunch parsley
  • 1 tablespoon salt 
  • 1 teaspoon potash 
  • 125 ml shea butter 
  • onion 
  • 3 tomatoes 
  • pepper 
  • Pinch black pepper powder
  • 1.5 liters Drinking water

Instructions:

  • Beforehand, the bean is cooked in 1.5 liters of water in a pot by adding a teaspoon of potash and a tablespoon of salt.
  • We crush the fresh moringa leaves to obtain a paste.
  • Wash the fish well, seasoned with a pinch of salt and a pinch of black pepper powder. Then remove the bones from the fish.
  • Mix the fresh crushed moringa leaves and the fish and make the dumplings which are fried in shea butter.
  • Cut the vegetables (onion, tomatoes, garlic, pepper, parsley) and fry them with shea butter to obtain a sauce.
  • Serve the bean with the meatballs and the sauce.
  • Sprinkle the dish with moringa seed powder
