Ghana Moringa Mushroom and Fish Jollof Rice

Ingredients:

  • Freshly growing green pods,
  • moringa leaves,
  • moringa flowers,
  • rice,
  • dry fish,
  • mushrooms,
  • carrots,
  • green peppers,
  • onions,
  • tomatoes,
  • hot peppers,
  • garlic,
  • ginger root,
  • turmeric powder,
  • curry powder,
  • coconut oil.

Instructions:

  1. Chop up fresh moringa pods, onions, green peppers, carrots, mushrooms.
  2. Blend tomatoes, hot peppers, garlic, ginger root.
  3. Pour 40ml coconut oil into your heating pot.
  4. Put you chopped onions in hot oil.
  5. Pour in your blended mix.
  6. Wash rice and put aside.
  7. Put your dried fish and mushroom into the stewing sauce.
  8. Let cook for about 10 min.
  9. Pour in your washed rice allow to boil for another 10 min.
  10. Now you add you moringa fresh pods, leaves, flowers, carrots.
  11. Mix well and cover till rice is cooked, soft and ready for serving.
