Moringa Crepe & Vanilla Cream Cheese Cake with Lavender Syrup

Ingredients:

Lavender Syrup

  • 3 cups water
  • 1 cup Lavender buds
  • 6 cups sugar

Moringa Crepe Cake

  • 6 large eggs
  • 170 grams cream cheese
  • 3/4 cup flour 
  • 2 tbls sugar
  • 2 tbls Moringa

Vanilla Cream Cheese

  • 340 grams cheese cream
  • 1/2 cup unsalted butter
  • 2 tsp vanilla
  • Pinch of salt

Step by step Instructions in perfect order:

Homemade Lavender Syrup:

  1. In a saucepan bring water and lavender to a boil.
  2. Reduce the heat to a simmer and add sugar.
  3. Stir the mixture until the sugar has fully dissolved.
  4. Simmer for more or less 15min. on low heat.
  5. Remove the saucepan from the heat and allow it to cool for +/- 1hour. 
  6. [Time to make the Moringa Crepes, Return later to complete]
  7. Using a sieve or cheesecloth, strain the mixture to remove the lavender pieces. 
  8. Pour the syrup into the desired serving jar. 

Note: If stored in an airtight jar, the syrup can be stored and used for 1 month. 

Moringa Crepes:

  1. Separate the egg yokes from the egg whites. Set egg whites aside. 
  2. Mix together the egg yokes, flour, sugar and moringa powder.
  3. In a separate bowl beat the egg whites until frothy. 
  4. Slowly pour the beaten egg whites into the mixing bowl. Using a baking spatula gently fold the ingredients together until well blended. 
  5. Heat a non-stick pan over a medium-high heat. Add a dash of oil and spread.  Then pour the desired amount of batter (depending on the thickness wanted) into the pan and swirl. Flip when ready. When the crepe in done transfer the crepe to a wire rack to cool. Leave to slightly cool down. Once cooled the crepe is ready to be stacked on a plate. 
  6. Repeat until the batter is up. 
  7. Wrap the crepes and refrigerate.

Notes: When stacked and wrapped tightly crepes can be made 1 day in advance

Vanilla Cream Cheese Frosting: 

  1. Add all ingredients to a mixing bowl. Mix well until a soft texture is achieved. 
  2. Set aside at room temperature. 
  3. [Complete the Lavender Syrup] 

Time to assemble your cake:

  1. Choose a desired serving plate.
  2. Layer your moringa crepes by spreading a thin layer of cream cheese frosting in between each crepe.
  3. Decorate your Cake by sprinkling a small amount of moringa powder on top and by adding a small bundle of Lavender to the plate. Present your cake with the Gorgeous Lavender Syrup. 
  4. Just before serving pour a generous amount of Lavender Syrup over your crepe cake. 
  5. and ENJOY!
