Moringa Tatale

Ingredients:

  • ½ cup Moringa powder
  • 2 Ripe Plantains
  • ½ cup Flour
  • 2 Peppers or to taste
  • 1 Medium Onion
  • Small piece Ginger
  • Pinch salt
  • Oil for frying

Instructions:

  1. Wash the plantain, peppers, onion, and ginger.
  2. Peel the plantains and cut them in pieces.
  3. Cut the peppers, onion and ginger and blend together. 
  4. Put the mixture in a bowl and fold in the moringa powder, flour and salt. 
  5. Mix with a wooden spoon till the mixture drops easily. (2 wooden spoonfuls will make a sizeable tatale.)
  6. Fry on medium heat in a  little oil. 
  7. Fry turning until both sizes are cooked. (Takes about 2 minutes to cook.)

Note: Serve with desired stew, i.e beans.  Can be eaten hot or cold.  Can serve with roasted groundnuts.ga fish tastes succulent with Moringa.
