The Recipe: Three-Course Moringa Dinner 

Ingredients:

Camel Soup

  • Camel bones
  • Moringa powder
  • Salt
  • Pepper

Camel Meat Stew

  • Camel meat
  • Spinach
  • Onions 
  • Bell pepper
  • Carrots
  • Moringa mchuzi mix

Moringa Chia Ugali

  • Moringa maize meal
  • Water
  • Pinch of salt

Dessert

  • Banana
  • Melon
  • Moringa oil
  • Passion fruit

Instructions:

Camel Soup

  1. Boil camel bones for 48hrs to extract all the calcium from the bones
  2. Separate bones and the soup
  3. Add into the soup salt, moringa powder, and chilli 
  4. Blend the mixture in a blender and put in a vacuum flask ready for serving 

Camel Meat Stew

  1. Chop the meat into dices
  2. Boil the camel meat to tender
  3. Cut spinach into required sizes
  4. Cut the carrots into long cubes
  5. Chop the bell pepper into slices
  6. Cut the onions into dices
  7. Put oil in saucepan on medium heat fire and add the boiled meat together with the other mixture above
  8. Fry for 10minutes 
  9. Sprinkle moringa mchuzi mix and a pinch of salt
  10. Mix and heat for 1min and put in a hot dish ready for serving.

Moringa Chia Ugali

  1. Put water in a sauce pan and boil to its boiling point
  2. Add moringa chia flour and stir thoroughly under medium heat to make big ball of ugali.
  3. Cover the ugali ball with a lid and cook for 3minutes under low heat
  4. Turn the ugali ball and cover again to cook for 3 minutes more.
  5. Repeat the same for period of ten minutes.
  6. Remove from the fire and place on a tray ready for serving.

Desert

  1. Cut bananas into slices and melons into dices
  2. Put them in a fruit bow and sprinkle passion fruit on top
  3. Top up the fruits mixture with moringa oil

Serving

STARTER: Serve the camel soup in a glass as a starter.

MAIN DISH:  Make smaller balls of the moringa chia ugali depending on the household size. Put the ugali bowls on a big platter and place them at the side sizzling camel meat served with vegetables.

DESSERT: Serve the fruit salad in the bowl on side plates as a dessert.
